It's about this time of year we start thinking of all the fresh vegetables we are going to eat and how we are going to prepare them. The snow is gone for the most part and and the sun is starting to show itself a bit more often. The season of soups and casseroles is about finished.
This cous cous salad is one of our favourites! So simply.
I use a garlic flavoured cous cous for a little something different, but you could use whichever you like.
Cook the cous cous as directed, fluff with a fork and let cool some while you prep the veggies you would like.
I don't measure with this recipe I just add things as I go and decide.
The salad pictured has approximately:
Balsamic Vinegar (just a slash or two)
1 small Red Bell Pepper
2 Green Onions
1 handful of sliced black olives
1/2 cup of light feta cheese
Refrigerate for about an hour.

wonderful waffles
What's a better way to start a blog and well any Saturday morning than with a fresh batch of waffles? This is a pretty basic waffle recipe. we just add a little cinnamon and vanilla to ours.
2 cups all purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1-3/4 cups reduced-fat milk (we use skim)
6 tablespoons vegetable oil
1 tablespoon vanilla
2 large eggs
Place ingredients in a large mixing bowl and combine until well blended and smooth. Let the batter sit for 5-10 minutes before using. Remember to pre-heat your waffle iron, these 5-10 minutes are a great time to do that. I use approx. 1/3 cup of batter for each waffle.
Moo loves her waffles with any type of fruit on top, this morning we used peaches.

a little about moo ...
Moo ... in no shape or form is the word moo in reference to beef. It is our daughter Maddie's nickname, get it? Maddie-Moo.
We are a pescatarian household, so you won't find any meat on our plates, just seafood, veggies ... ok and a dash of grains and dairy. With an abundance of fruit trees in our backyard, easy access to local/organic produce and the ocean out front it's easy to love cooking/baking at home.
Not going to lie, we sometimes run to the store for those all too convenient boxed/prepared groceries (selective of course). I am using this blog to encourage us to continue on our cooking and recipe building journey.
Hope you enjoy and visit often, even try some of what you see here yourself!
